An easy vegan breakfast for kids is important to many plant-based and vegan families who are in a hurry every morning. So the first half of this article is dedicated to very easy breakfast solutions and even suggestions on things you can take with you on the go, and the rest of the article is dedicated to plant-based healthy breakfast ideas for kids that take a little longer to prepare.
It would be great if the first part of your child's breakfast would always be fruit. Because this is a time of the day when the stomach and gut is ready to absorb all the goodness straight away.
Smoothies and fruit bowls or fruit salads are great to give them when they wake up. Or make it easier for you and just give them their fruits as they are. Apple, pears, plums, grapes, strawberries...
Dried fruit is very nutritious, and very good to add to any breakfast food. Of course they are also very sweet, so make sure the teeth are brushed after breakfast. They are also full of good fiber for their digestive system.

Just a few minutes ago I made something very nice for my son, the only ingredients are blueberries and agave syrup and a little water.
It's so simple and so nutritious. Good for eyesight.
EASY BLUEBERRY SOUP
Empty a bag of frozen blueberries into a pot with a few tablespoons of water. Warm everything up a little, until hot. But make sure it doesn't start boiling. Then mash it all with a fork and add some agave, 1 teaspoon is enough, and finally pour everything into a glass. You can also leave the skins in the pot, only use the öiquid, if you want it to be more like a hot drink than a soup.
Another way of making it is by using a mixer to blend the frozen berries with some water and the agave.
It makes a cold version of the same drink or soup or whatever you want to call it!
And next we have a nice morning sorbet to try out:
Add some fresh berries as topping and it is so yummy! The trick is to always keep cut up frozen fruit in your freezer, like mango and banana slices. Then you can also make very nice morning smoothies easily, by mixing some fresh fruit with some of the frozen and the result will be oh-so-good.
Morning Fruit Salad
2 large bananas, cut into small pieces
Lots of red grapes, cut into halves
1 fresh and ripe pineapple, cut into chunks
Place everything in a large bowl and toss together.
Serve and eat!

How much our child needs to eat in the morning depends on how long it is until the child will eat again. If it is several hours, it makes sense to give a little more than if there is a mid-morning snack routine at your childs school.
If there is no time to sit down at the breakfast table, prepare some breakfast for them the night before, to take with them in the car or wherever you are planning for them to have it. A vegan protein bar, a few pieces of fruit, maybe some fruit salad, a hummus sandwich with vegetables are some great choices to pack into a little breakfast box. Store-bought cereal is no longer a good idea, because we now know how unhealthy and processed and full of refined sugar most commercial cereals are,

I love baking vegan breakfast cookies, like oatmeal raisin. But I also like to make granola and another favorite in my house is chia seed pudding.
You can easily make your own granola with dried fruit, so much healthier than the ones you find in the supermarkets.
When I make granola I use rolled oats that don't contain gluten.
What you do is, you add some oats and cinnamon to a bowl and stir. The rest of the instructions you can see here:
I like to add dried cantaloupe, dried cranberries and diced almonds or hazelnuts.
I never use milk with the granola, but sometimes I use hazelnut or some other nut milk.
But most of the time I add the granola to my own blueberry soup.
This coupled with a glass of home made orange juice and some fresh blueberries - healthiest breakfast ever.

You could line them up real nice and beautiful and your kids will love it!
A few years ago there were a lot of ads everywhere of some commercial breakfast cookies that according to the advertising seemed like a healthy addition to everyone's diet, because of all the added vitamins in them.
So I bought them a few times, until I checked out the ingredient list.
They had four types of sugar in them! Sugar in different forms, cane sugar, high fructose corn syrup, barley malt, maltodextrin and brown sugar. And lots of other very strange ingredients too! Never bought them again.

This is what my son Benjamin has sometimes. Another favorite is oranges. And about half an hour later he has his "second breakfast". Sometimes that is an avocado and tomato salad, sometimes something else.
I have realized that he likes to eat quite a bit more on school mornings than weekends. Today he had two oranges first, then a sandwich with avocado and finally oatmeal with berries.
After the oatmeal he still asked for something else. I told him: "But I already made you a sandwich and porridge".
Unfortunately that statement hat didn't sit well with him. He got upset and said that if he still is hungry he is, no matter what I've already made for him. And that is true of course.
It was already late though and he had to get out of the house, but I gave him some pear pieces to eat while he was getting dressed and I also put some oatmeal cookies in his backpack. Hope he has a good day!
By the way, mornings are often stressful, but so is the rest of the day, So a little planning sometimes goes a long way, that is why meal planning has become popular with parents. It would be cool if we could make it part of our morning routine to sit down for 5 minutes and look through our recipes and write a shopping list.
That would make the rest of the day so much easier. We could then go shopping for the right ingredients on the way home from work or just before picking up the children at school.
